Sausage and Spinach Couscous

This recipe is from the Weight Watchers "In One Pot" cookbook. Quick, easy to prepare and one of my favorite go-to dishes. The original recipe calls for the chicken sausage to be cut into 2-inch pieces. However, I prefer to remove the casing and brown the sausage until it crumbles. If you prefer to use the 2-inch pieces of chicken sausage, be sure you allow the sausage to simmer in the sauce (covered) for about 8 minutes before adding the spinach and couscous
